Perfect pregnancy pancakes

With Pancake Day around the corner, we thought it only fitting to share our favourite recipe with you – one, we might add, you don’t need to feel an iota of guilt about tucking into, either. To give your insatiable self – and your little nut – tons of energy and nourishment, we’re prescribing our healthy, oh-so-fluffy perfect pregnancy pancakes. Thanks to their high protein and fibre credentials, and low sugar and fat content, these treats are made for pregnancy. There’s no sugar or refined flours here, either. Best of all, it couldn’t be easier to whip up this batch of beauties; all you need are four ingredients and ten minutes out of your day. Spoiler alert: you’ll want to make these a staple of your pregnancy diet – for breakfast, Sunday brunch, or to simply satisfy your pregnancy cravings. You’ve been warned!

Ingredients (serves 2)

2 large eggs

1 ripe banana

½ cup rolled oats

½ tsp. baking powder

Coconut oil for frying

Your toppings of choice

Method

Using a hand mixer or blender, combine the eggs, banana, rolled oats and baking powder thoroughly. Preheat a large pan and lightly coat with coconut oil. With a dessertspoon, dollop the batter onto the pan in small pancake-like circles. After a couple of minutes, flip your pancakes, ensuring both sides are cooked evenly. Serve with any toppings you fancy (see some of our favourites below!)

Topping ideas 

Pancakes are a brilliant canvas for a smorgasbord of delicious toppings. In fact, the sky’s the limit when it comes to adorning your banana delights. Be as experimental as you like. Besides the traditional maple syrup, here are some the best ways to pimp up your pancakes:

  • Berries
  • Chopped banana
  • Sliced mango
  • Kiwi fruit
  • Passion fruit
  • Stewed fruit (frozen raspberries work a treat!)
  • A dollop of protein-rich nut butter
  • Toasted flaked almonds
  • Grated dark chocolate
  • Sprinkling of cinnamon
  • Coconut yoghurt
  • Bircher muesli
  • Orange zest
  • Fresh lime/lemon juice
  • Coconut sugar
  • Honey
  • Pecans
  • Walnuts
